High Protein  Blueberry Muffins


Soft, fluffy, and packed full of protein, these vegan blueberry protein muffins are a great part of breakfast or snack time! Easy to make in one bowl, gluten free optional.

Mix the batter together in one bowl with a spatula, first whisking the wet ingredients and then adding the dry ingredients. Add the blueberry and lemon zest last.

Divide into 12 muffins and bake for about 24 minutes or until a toothpick pulls out clean. Let them cool for a few minutes and then enjoy!
