Toasted Coconut Cupcakes


The best vegan coconut cupcakes ever! Super moist, fluffy, and light cake with coconut and vanilla in the cake and the frosting! Easy to make and totally amazing.

Mix first the wet then dry ingredients together in one bowl. No need for fancy equipment!

Fill each cupcake halfway and bake for 23 minutes or until golden brown like these here.

Bake the unsweetened coconut at 325F for 10 minutes to get amazing toasted coconut flakes to sprinkle on top of the frosting.
