I love quick and easy dessert type recipes such as this one. With only a few simple ingredients you can make something everyone will want to enjoy a second (or third!) helping.

Puff pastry is rolled out and topped with vegan butter, brown sugar, cinnamon, and grated apples. Baking them in muffin tins makes for an evenly baked pastry, with a bonus of being easy to clean up.

Puff Pastry

So a major part of this recipe is the puff pastry. There are several options available in stores that are vegan and some that are both gluten free and vegan. Here are my recommendations:

Vegan Puff Pastry Brands:

Apples

There are a few different apples that I recommend for this. Personally, I love something that is a little sweet and a little tart, like the Honeycrisp apple! However, any of the following are delicious:

  • Granny Smith – crisp and tart
  • Honeycrisp – sweeter than a granny smith and holds it’s shape well after baking
  • Gala or Fuji – nothing sweeter than these!

Substitutions

Need to make this gluten free? You can! Some gluten free brands I recommend are:

And if you can’t find one in your area, you can make this with a gluten free pie crust. Just roll it into the same shape and bake for 15 minutes before topping it with the toppings.

  • Schar Puff Pastry in either Sheets or Flaky Puff Pastry (is also vegan!)
  • Geefree Puff Pastry Sheets
  • Jus-Rol Gluten Free Puff Pastry (UK)

Variations

  • Add some raisins to the grated apples before rolling up.
  • In place of a simple white icing, try drizzling some caramel sauce over top.
  • Maple Icing: Mix together powdered sugar with maple syrup until a thick sauce forms (try 1/2 cup of powdered sugar with 1 tablespoon maple syrup to start).

Instructions

Make sure to check out the recipe card below for the full recipe and ingredient list.

Step One: Prep the ingredients

Start by washing and grating your apple. In a separate bowl, mix together the brown sugar and cinnamon. Finally, melt the vegan butter so it is almost melted but totally liquid. You want it to be super soft.

Step Two: Make the Cinnamon Rolls

Showing the sliced pastry covered in sugar, cinnamon, and apples. One is half way rolled up, showing how small they are. This is resting on white parchment paper.

Spread the puff pastry out onto lightly floured parchment paper or a clean surface. Roll the dough out until it is 10×14-inches (25×35-cm).

Brush the vegan butter all over the pastry. Sprinkle with the cinnamon sugar mix, then the apples.

Taking a sharp knife or a pizza cutter, cut into 12 even slices. Roll them up carefully and place in an ungreased muffin tin.

Step Three: Bake

Bake the cinnamon rolls for about 15 minutes at 375F/190C. Remove them from the oven and let cool for 10 minutes before covering in a simple icing. Enjoy!

Make a simple icing sugar by combining 1/2 cup of powdered sugar with 1 tablespoon of water. Mix and drizzle over top!

How to Store

Countertop: Cover in an airtight container and store frosted or unfrosted cinnamon rolls on the countertop for up to 2 days.

Fridge: Cover in an airtight container and store both frosted or unfrosted cinnamon rolls in the fridge for up to 5 days. I like to enjoy them both cold or warmed!

Freezer: Baked and cooled apple cinnamon rolls can be wrapped up tight and stored in the freezer for up to 3 months. Thaw in the fridge overnight and warm up before serving.
